Red, White and Blue-berries?!?!?!
That’s right! This Fourth of July I am celebrating with this TO DIE FOR cake.
Lemme tell you all about it!
Its base is a moist layer of golden almond cake made with Bob’s Red Mill almond flour. Then, on top of that is a crunchy meringue layer. The secret here is, they are baked together! After pouring the batter into the cake pan, spread your meringue right over the top, and let it bake. The meringue puffs up and gets crunchy, while the cake stays moist beneath. It’s absolutely GENIUS!
In the middle, I made my go-to ultra vanilla-y custard, and layered some blueberries and raspberries. You could really do any fruit you’d like, but it wouldn’t be Fourth of July without Red, White and Blue!
I hope you enjoy this incredible cake as much and me and my family did! I kid you not, it was gone in seconds! I made a little raspberry syrup to pour rover the top, just to add a little pizazz, although that’s not necessary. You know me, I can just be extra sometimes :P
