To me, there isn’t much better! Especially when the pancakes are delicious, fluffy and flavorful!
Lemon poppyseed has always been one of my go-to flavor combos. This was my first time making lemon poppyseed pancakes and I LOVED it! The lemony flavor is so refreshing, the perfect combo for a Sunday morning.
The best part of this delicious stack to me, was the icing! Instead of maple syrup, I made a quick lemon icing to drizzle over. To add even more lemony goodness, I also whipped up some butter and lemon zest to top them with. There’s something about whipped butter that makes the stack even more decadent!
