Muesli and oatmeal have always been one of my favorite breakfasts to have in the morning, something about the way it fills you up and keeps you satiated all day.
And some days… you just feel like having a cookie for breakfast, and why shouldn’t you? Life is short, after all!
That is how the recipe for my Muesli Breakfast Cookies came to be. Made with Bob’s Red Mill Paleo Muesli, I also added oats, pecans, and a few chocolate chips, just for good measure!
These cookies are also made with coconut oil, and half almond flour, making them even a tad bit healthier. As for the size, I wanted a good hearty cookie, so I used a large scoop, but feel free to use a smaller one!
