I love to find new and creative ways to prepare chicken. Not only does this recipe do that, but it opened my eyes to the wonders of quinoa. I was ALWAYS a rice girl, but lately I have been loving my quinoa for something different!
I put my classic southwest twist on these stuffed peppers and needless to say, I'll be making them again very, very soon.
