Crostatas are an easy peasy lemon (pun intended) squeezy dessert using a pie dough crust filled with some sort of fruit. If you have the right pie dough recipe, these things can be whipped up and eaten in no time. I paired my blueberries with lemon and thyme to add a unique flavor and kick it up a notch! :P

 

Since blueberries are abundant right now, and also GREAT for your health, I wanted to come up with a filling using them. Lemon and thyme pair great together and gives the blueberries the refreshing and sophisticated taste they needed to go with the pie crust. This thing turned out BETTER than I had even expected, and believe me, I enjoyed every last bite.

A fun fact about blueberries is that when introduced to an acid such as lemon juice or vinegar, they will turn a reddish color. And when introduced to baking soda, they turn a greenish color (yuck!) Which is why sometimes your blueberry muffins are green. You can add lemon juice to your batter to prevent this!
